Double Crunch Apple Sandwiches
There is something about apples that every kid loves. Perhaps, it is all about the unique, mildly sweet taste and a super crunchy texture.
Peanut butter is an excellent source of healthy fats and protein. Just keep in mind that some store-bought peanut butter is packed with added sugar and vegetable oils so shop smart and choose the one with at least 99.5% peanuts in it (like smooth Pics peanut butter).ย ย

This is a really simple and real quick snack, that can also be served for breakfast. This recipe takes a twist on a classic peanut butter on toast with the sliced apple used as the base. The granola adds an irresistible crunch that is so appealing to all kids.
                      Ingredients
-
1 apple washed, skin on
 -
2 tbsp. smooth Pic's peanut butter (or similar)
 -
2 tbsp. granola or muesli
 -
1 tbsp. desiccated coconut

Directions
Cut an apple into horizontal, flat slices depending on the preferred thickness (younger kids might prefer thinner slices). Discard any seeds and pulp around the core.
Smear peanut butter on top of each slice, sprinkle with granola or muesli and desiccated coconut. You can also top each sandwich with an extra apple slice depending on your preferences.
Gobble it up fast before it turns brown due to the prolonged exposure to oxygen.
