
Paleo Chicken Patties
I am a big fan of "one family, one meal" approach. Let's admit no one likes to slave in the kitchen preparing a different meal for each member of the family. I do understand that it is different for families with food allergies or sensitivities, and I am honestly feeling for you... However, for the majority of us, the idea of one family equals one meal is very appealing.
The two secret ingredients of these patties are finely grated zucchini and mushrooms. Both add moisture to the patties, while carrot, spring onion and coriander balance the flavour. Even the pickiest toddler will not spot the veggies in these patties. Hurray, to the 5+ a day!
The ground LSA mix adds nutrients to this dish, such as fibre and essential Omega-3, which are necessary for healthy heart and brain functions.

These are the most delicious, nutritious, fast, easy and just mind-blowing Paleo chicken patties that all the family will enjoy.

Ingredients

500g chicken mince
-
300g whole zucchini
-
100g carrots
-
100g mushrooms
-
50g spring onion
-
15g fresh coriander
-
60g ground LSA mix
-
1 tsp mustard
-
1/2 tsp black pepper
-
1/2 tsp turmeric
-
pinch of salt
Directions
Preheat oven to 200C, prepare large oven tray and line it with the baking paper or foil.
Finely grate zucchini, mushrooms and carrots using a food processor or a hand grater. Squeeze all excess liquid from the zucchini.
Finely chop spring onion and coriander.
In a large bowl combine chicken mince, mustard, grated vegetables and chopped herbs. Season with black pepper and salt according to your taste.
Use your wet hands to form small balls (about 5cm in diameter) and place it on the prepared tray. Gently flatten balls with the fork.
Place in the oven on the top rack and bake for 10 min.
Take the tray out of the oven and flip each patties. Put it back in the oven for another 10 min. You can change the oven's setting to the grill or fan-bake function to brown the patties up.
