Gluten-Free Veggie Macaroni & Cheese

Ingredients

Directions

  1. Preheat oven to 190 Β°C (fan-baked). Grease baking dish. 

  2. Bring a medium pot of lightly salted water to a boil. Cook pasta shapes in the boiling water, stirring occasionally until cooked through but firm to the bite. Drain.

  3. Melt butter in a saucepan over medium heat. Stir salt and mustard into it and remove from heat.

  4. Whisk COLD milk and corn starch together in a bowl until smooth. Stir into butter mixture and return to the stove. 

  5. Cook milk mixture, stirring constantly, over medium heat until sauce is thickened. Remove saucepan from heat.

  6. Stir 2 cups Cheddar cheese into sauce until heat from sauce melts cheese. Add pasta to cheese sauce and stir well. 

  7. Pour pasta into the prepared baking dish and sprinkle with the remaining Cheddar cheese. 

  8. Bake in the preheated oven until top is crunchy, about 45 minutes.
