Let's face it, who doesn't love chocolate cake? What if I tell you that it can be healthy too.
This rich chocolate cake is made with premium dark chocolate and contains a mystery ingredient - the humble beetroot! It might sound weird but most of us (including kids) won't be able to pick it.
The peanut butter is used in this cake instead of traditional dairy butter. The peanut butter is packed full of good stuff. It contains healthy monounsaturated fat, fiber and protein. To make it even healthier this cake is refined sugar-free.

Ingredients
Dry Ingredients:
230g flour, plain
2 tbsp cocoa powder, dark
1 tsp baking powder
1 tsp cinnamon, ground
Wet ingredients:
150g smooth peanut butter (or any other butter of your choice)
250g beetroot (boiled and peeled)
3 eggs
50g date syrup (or alternative)
1 tsp vanilla extract
1/2 cup chocolate chips, dark
Directions
Preheat oven to 180C and grease with oil or line a loaf pan with baking paper.
Combine wet ingredients, except chocolate buttons, into a large bowl.
Blitz it up with a stick blender until an even texture is obtained. You can also whiz it up into the food processor.
Melt dark chocolate chips in the microwave or over the water bath, and gently add it to the beetroot mixture until an even texture is obtained.
Measure dry ingredients and add them to the chocolate and beetroot mixture. Gently mix with the spatula until evenly incorporated.
Transfer mixture into the lined or greased loaf pan. Bake for approximately 30-40 minutes.
When ready take it out of the oven and cool down onto the wired rack before serving.
