Supercharged Kiddy Smoothie

If you are worrying that your kids don't get enough nutrients into their diet each day try offering them a smoothie loaded with veggies, protein, and fibre for breakfast.

I like to incorporate pumpkin in my cooking not just because of its natural sweetness but it's a great source of fibre, digestive enzymes, potassium and vitamin A. Plus, it's available all year round and reasonably inexpensive, I normally make a big batch of pumpkin puree and then just freeze it in portion-sized silicone moulds to use later in a smoothie or baking.    

Kale and spinach are a nutritional powerhouse. They are a good source of vitamins A, C and K, and full of minerals, such as calcium, copper, potassium, iron, manganese and phosphorus.  

This smoothie is probably one of the easiest and fastest meals you can whip up in the morning. Not only is it delicious but also packed full of everything growing bodies need to start the day: protein, vitamins and antioxidants, essential Omega-3s fatty acids, fibre, and probiotics. 

After all, breakfast is the most import meal of the day, so let's start it right, and your child will be supercharged and have TONS of energy for conquering the world!  

 

INGREDIENTS

150ml kefir or yoghurt, unsweetened 

2 tbsp ricotta/cottage cheese 

25g pumpkin, cooked 

1/2 banana, peeled

1 tbsp ground LSA mix

1 tsp chia seeds

1/2 tsp cinnamon, ground 

 

METHOD

Put all frozen ingredients, chia seeds, ground LSA mix, and cinnamon in a blender or food processor bowl. Leave in the fridge overnight to defrost.

 

In the morning, add half of a banana, ricotta/cottage cheese, and kefir or yoghurt into the bowl. Whiz until the desired consistency. This smoothie is quite thick and if you prefer a bit runnier just add a few extra spoons of kefir or yoghurt. 

 

Pour smoothie into the glass, cup or any other carrier your little one prefers. In this case, I am using 300ml Kai Carrier as it works for us the best!

 

The breakfast is ready. Well, almost... 

 

I normally serve it with Happy Baby Organics, superfood puffs, for a complete package and to satisfy the crunch crave. Now, it's all done!
