Brownie Energy Balls

The brownie you will not feel guilty feeding to your kid or secretly eating yourself while trying to feed your little one with broccoli.

These balls are sweetened naturally with raisins, which also contain plenty of fibre. Plus, the ground L.S.A mix is another great source of gluten-free fibre, keeping us nice and regular. The almond meal adds protein and important minerals like zinc, magnesium and calcium; while coconut oil provides healthy fats and a satisfying mouthful making this a delicious and nutritious snack that both kids and adults will enjoy.

 

INGREDIENTS

150g raisins, soaked
100g almond meal + 15g for dusting
30g ground LSA mix
20g cocoa powder, unsweetened
50g coconut oil, melted
2 tsp vanilla extract
1/2 cinnamon, ground
Pinch of salt (optional)

 

METHOD

In three separate small bowls:

1) Soak raisins in hot water;
2) Melt coconut oil;
3) Measure all dry ingredients: 100g almond meal, LSA mix, cocoa powder, cinnamon and a pinch salt if desired.

 

Leave raisins to soften for around 5 minutes. Then drain raisins and transfer into the food processor bowl. Add melted coconut oil and vanilla extract.

 

Pulse until the puree consistency is obtained.

 

Add dry ingredients to the raisin puree and mix thoroughly.

 

Using your hands, scoop out dough and form into a ball on the palms of your hands. Wet hands make it easier to roll as the dough doesn't stick as much to your fingers. In a small bowl measure 15g (one tablespoon) of the almond meal and roll each ball in it to create a coating. 

 

Chill for 30 minutes before serving.

 

Store in an airtight container in the fridge for up to a week (never last that long in my fridge).
